Chick Pea Salad – Easy, Simple and Tasty!
This is a very simple and easy dish that is really nice at this time of year (actually anytime – but really nice now)
Chick Pea Salad
What you will need;
1 Can of Chick Peas – 540ml ( I used Cortina Brand from London Drugs – might as well try and sell something 🙂 )
1 Can of Chunk Light Tuna – I like the dark rather than the light tunas – little more flavour – favourite brand to use is “Rio Mare”. Packed in Olive Oil and from Italy – absolutely awesome!! Not cheap – usually around $3.99 a tin.
1 small seeet onion – cut into very small pieces
1 stalk of celery – cut the stock lengthwise 4 or 5 times and then into nice small pieces
1 tblsp Olive Oil – Extra Virgin only ( I say 1 tablespoon – but I always use 2 ) ( I use A.Genco, Berio or Hermes – all at London Drugs )
1 tsp Balsamic Vinegar
Sea Salt – to taste ( Check out what we have at London Drugs now – A.Genco, Hermes and some WONDERFUL Pink Himalayan Sea Salt in grinders – soooo nice)
Pepper – to taste ( Peppercorns in Grinders also in the food aisles of you know where )
Paprika and Garlic Powder – these are optional, but can add a really nice kick to the salad – again – to taste.
Add all of the above to a bowl and stir – that’s it!!
It is a very refreshing salad that can be used as the meal ( with a really nice loaf of bread ) or as a side. If you want to “jazz” it up a bit and really razzle / dazzle the friends – tray adding a small amount of sundried tomatoes and a touch of capers. It will just elevate the flavours to the next level.
